the honey that most represents Matera because it is harvested on the Matera Murgia in the summer months. Very particular, with an amber color tending towards brown and an intense, characteristic and spicy aroma. It goes well with mature goat's and sheep's cheeses.

Smell: very intense, between floral and "chemical", perhaps reminiscent of thymol

Taste: Just as strong as the smell

Aroma: spicy

Crystallization: variable

Pairings: due to its intense aroma it goes well with mature goat's and sheep's cheeses.
