Honeydew is a sugary secretion produced by insects that feed on the sap of various plants. Bees collect this substance and turn it into honey. It is harvested in the woods of Matera in the months of July and August. The color varies from very dark to almost black. It recalls the scent of wood and resin and has a pleasant, slightly sweet flavour. It pairs very well with smoked and mature cheeses.

Color: very dark amber to almost black

Odour: strongly aromatic, of wood, of resin

Taste: pleasant, slightly sweet and slightly acidic

Aroma: panna cotta, caramel

Crystallization: liquid, generally very viscous

Pairings: it goes very well with smoked or matured cheeses, in infusions and decoctions.
