This particular type of honey is collected in the month of September in the naturalistic oasis of San Giuliano, it has an amber color in the liquid honey. With crystallization it reaches a particularly fine granulation and a beige color. Its intense smell makes it suitable for pairing with medium-aged cheeses with a spicy flavour.

Smell: dried mushrooms, liquorice, smoked

Taste: persistent, normally sweet, sometimes salty

Aroma: recalls liquorice toffee

Crystallization: compact and particularly thin
