In addition to their size, BIG lentils are characterized by the preservation of their aromas. Their taste is sweeter and is easily digestible thanks to the presence of many fibres, mineral salts and vitamins. Unlike smaller ones, large lentils need to soak for at least 6 hours. In the kitchen they go perfectly with the traditional zampone and cotechino for New Year's Eve.
