From the power of the black grape, combined with the knowledge of man, comes a wine suitable for all seasons, to be enjoyed throughout the meal. The Cantonovo rosé does not prevail but accompanies, with a refined presence at the table, which tells us about the pleasure of the conviviality of a welcoming land like Puglia.
Grape variety: Primitivo 100%
Production area: Marchione district, on the Turi-Castellana Grotte (Puglia/Italy)
Type of soil: calcareous and clayey on hilly reliefs
Training system: espalier
Yield per plant: approximately 1 to 4 kg
Year of planting: replanted in 1990 where there had been a vineyard since the early 1900s.
Harvest: in the first half of September in company-owned vineyards and with grapes harvested in boxes after a careful selection of the bunches.
Winemaking: according to the modern tradition that combines the ancient technique of raising the hat, in which fermentation raises the pomace until it reaches union with the controlled temperature. The skill in the cellar, starting from a black grape to arrive at the delicate rosé wine, is contained in a handful of hours in which each action requires a wealth of experience.
Refinement: takes place in steel for approximately 1-2 months, followed by bottling immediately afterwards.
